It's unusual for me to be here in Spokane at this time of year. I'm used to being outdoors, that's what makes me smile and feel most in my body. I get out as much as I can, the sun shining helps alot. While I'm inside, besides splashing around color, I'm experimenting with recipes that help keep the house smelling yummy and my belly feeling well nourished. I'm always on the search for "healthy" treat recipes. These are my latest favorites!
2 cups/1 can pureed pumpkin
2/3 cup nut butter
6 TBSP Maple syrup + opt: 1 squirt monk fruit
2 tsp vanilla
3/4 Cup Cacao powder
2tsp baking Powder
2-3 Scoops Collagen Powder
1/2-3/4 Cup GF flour
Pinch salt
I mix everything in my food processor using the dough "blade" and dough setting.
Add a splash or nut milk if you like your brownies more moist.
These are a little on the bittersweet side, the way I like them. Add more maple syrup or other sweetener if you prefer more sweet.
Fold in:
1/3 C Caco Nibs
1/2 C Lily sugar free Chocolate chips
Spread thin on cookie sheet lined with parchment paper.
Bake 20-30 minutes at 350 until a fork comes out clean.
Cut and cool on wire rack.
Store in fridge or freeze.
